Roasted bell peppers & goat cheese salad

Ingredientes:

1 bell pepper

½ red onion, sliced

½ tbsp. pine nuts

25 g Vitacress watercress

1 tbsp. olive oil

10 g goat cheese, crumbled

1 tbsp. balsamic vinegar

Salt and freshly ground pepper to taste

PREPARATION:

Preheat oven to 220º C. Roast bell peppers in an oven for 20 minutes, or until skin is dark. On another tray add the onion, pine nuts and olive oil, and roast for 10 minutes. Stir in salt, vinegar and pepper, and set aside. Gently transfer peppers from tray to plastic bag and allow to cool. This will make removing the skin of the bell peppers easier. Peel and seed the peppers, and chop finely. Stir well all ingredients in a salad bowl, including sauce from trays, and serve with bread.
