Potato and spinach salad

Ingredientes:

125 g Vitacress baby mini potatoes

50 g cherry tomatoes, halved

25 g Vitacress baby spinach leaves

1 egg yolk

1 tbsp. olive oil

Juice and zest of ½ lemon

1 tbsp. pink peppercorn

3-4 tbsp. Vitacress fresh mint leaves, chopped

2 tbsp. almonds, toasted and sliced

Salt and freshly ground pepper

PREPARATION:

First, cook potatoes in lightly salt water. Drain and allow to cool. Place potatoes in a bowl and add spinach leaves. For the sauce, beat egg yolk and olive oil into a fluffy cream in a bowl. Add chopped mint to mixture. Season with salt and pepper. Add lemon juice and zest. Sprinkle potatoes with sliced almonds and pink pepper. Serve with mint dressing and cherry tomatoes.
